Quinoa Patties w/ Shiitake Mushroom
Quinoa is such a super-food, and I realized that it goes with so many ingredients. You would notice that I’m trying to avoid carbohydrates as well as sugar as much as possible in most of my recipes. Then again you need a source of energy, and this one does it so well! It is such a great source of protein, fiber and various vitamins and minerals. Well you get the drift!!
This recipe can be again modified in so many ways. This is my go-to recipe when my refrigerator is almost empty and I have a few left over veggies and I can just add them along with quinoa to bake some patties.
