
Guess what!! Summer is here again, and after all the delicious Indian food last week, all I could think was – some fresh and colorful salads. Peaches are a lovely addition to any salad, because they are so good for your skin, they are low in calories and are a great source of Vitamin C and A. I’m sure it has many more health benefits, however, it tastes equally amazing and look at the color it pops out!! So, I decided bring some sunshine and add some peachy fun to our lives, while we gobble this easy-peasy salad!
SERVES: 2
INGREDIENTS
2 medium peaches – sliced
4 cups of arugula
1/2 cup of chopped yellow peppers
3/4 cup toasted walnuts, roughly chopped
3/4 cup cranberries
Optional – 3/4 cup cooked shrimp
Optional – 1/4 cup feta cheese/ goat cheese, crumbled
Dressing:
2 tbsp balsamic vinegar
1 tbsp lemon juice
1/2 tsp lemon zest
1 tsp ground black pepper
1/2 tsp salt
LETS GROOVE
- Place the arugula, sliced peaches, diced yellow peppers, chopped walnuts and cranberries, feta cheese (optional), and cooked shrimp (optional) in a large bowl.
- In a small bowl, whisk together the balsamic vinegar, lemon zest, lemon juice, salt and pepper.
- Add the dressing to the salad and toss them nicely.
