Zesty Lime Shrimp Salad

Did I tell you about my love for shrimps yet? No you say!! Well they are one of my favorite sea foods, and my parents would vouch for that. I’m from the eastern coast of India, where fish is one of the staple food and the flavors are just mind-blowing. Whenever I would visit my parents, the first thing my dad knows that I would ask for is shrimps, and he will somehow manage to find some for me always. My grand parent’s house has a lake in the backyard, and whenever we visited, my grandpa would make sure to catch some fresh fishes and yes, that would include shrimps. He would clean and cook them himself and I can just go on and on with those stories, but I think you see the point here! Lol!

This is a very simple healthy quick salad specially because it has two of my favorite things – shrimps and avocados 🙂 Gobble gobble people!!

SERVES: 1

INGREDIENTS

4 cups chopped cooked shrimp (usually used for salads)
2 tbsp rice vinegar
2 tbsp chili garlic sauce
1 tbsp olive oil
1/4 cup fresh lime juice
1 tbsp ground black pepper
2 garlic cloves, minced
8 cups fresh baby spinach
1/4 cup diced peeled avocado
1/4 cup cilantro leaves
salt to taste

LETS GROOVE

  • Combine shrimp, 1 tbsp vinegar, and the chili garlic sauce in a large bowl; toss well, cover and set aside for about half an hour.
  • Mix up the other tbsp vinegar, oil, lime juice, ground black pepper, minced garlic, and salt. Stir them up for a zesty vinaigrette.
  • Place the spinach in a big salad bowl, top it with the shrimp mixture. Add the diced avocados and cilantro leaves. Sprinkle the vinaigrette and toss them up.
