Orange Pecan Shrimp Salad

Never knew that oranges and pecans would be such a great combination. And I just love to stumble upon them especially when they give me that zesty kick. This recipe is so light and fresh! I’m sure you would know by now that the shrimp just makes it extra special for me..Lol! Hope you love it as much as I do.. Gobble gobble people!!

SERVES: 1-2

INGREDIENTS

1 cup baby spinach/ 1 cup lettuce, torn into small pieces
10-12 florets of orange
3/4 cup toasted pecans, roughly chopped
3/4 cup cooked shrimp
Optional – 3/4 boiled and salted soy chunks instead of shrimp
Optional – 1/4 cup feta cheese, crumbled
1/4 cup orange juice
1 tbsp white wine vinegar
1 tbsp olive oil
1 tbsp ground black pepper
salt to taste

LETS GROOVE

  • Place the baby spinach/lettuce, pecans, feta cheese (optional), and soy chunks/ shrimps (optional) in a large bowl.
  • In a small bowl, whisk together the orange juice, vinegar, oil, salt, and pepper.
  • Take a portion of the dressing and add the oranges to it.
  • Add the rest of the dressing to the salad and toss them nicely. Add the oranges on top of them.
