
I wanted to try making some quick snacks for my in-between-meal-cravings for something different. And I always used to turn to sugary snacks such as mini muffins or cookies etc. I still love them, no doubt there! I’m big on desserts and sweet snacks..But what about something crispy and deliciously healthy? Let’s gobble gobble, will ya!!
SERVES: 1-2
INGREDIENTS
2 medium zucchini, quartered and cut into large pieces
4 medium potatoes/ 8 baby potatoes, peeled and cut into large chunks
1 of each – medium red, orange and yellow bell pepper, seeded and chopped
1 clove minced garlic
1/2 cup dry bread crumbs
3-4 tbsp olive oil
2 tbsp paprika
2 tbsp ground black pepper
salt to taste
LETS GROOVE
- Preheat oven to 400°F.
- In a medium baking pan, toss together the zucchini, potatoes, red bell pepper, garlic, bread crumbs. Sprinkle olive oil over the veggies.
- Season with paprika, salt, and pepper.
- Bake the tossed up veggies for an hour, stirring occasionally, until potatoes are tender and lightly brown.
