Oat Chocolate Chip Mini Muffin (No Sugar No Oil No Flour)

Birthdays, Chocolates and Muffins are some of my favorite things in the world, not necessarily in the same order. Although when put together, they definitely can rock anybody’s world!! So, this hump day I decided to spread some love by spinning them all into a delicious breakfast for my partner-in-crime’s birthday.

Crunchy Potato Cups

We all crave for afternoon snacks, and thats when our mind doesn’t wander into the health zone Back when I was a kid returning from school, my mom had to be super creative with even the basic rice and lentils to keep me away from those candies!! And some days she would let me experiment during my snack time, and I would play the chef in her kitchen. Overtime the kitchens have changed, but it still feels the same when I walk into my kitchen on a Friday afternoon to spruce up a quick snack for a fun evening with friends! I love to spice these little cups every time with different spice combinations and , so definitely feel free to be as creative as you can! And of course, don’t forget to Gobble Gobble!!

Oat Mango Pecan Muffin (No Sugar No Oil No Flour)

It’s always a special occasion when you cross your first landmark, and it has been an amazing fun ride sharing our tiny efforts towards a healthy living. A little over a month has passed since I made the move from the big apple to this beautiful sunny place with a new job, a new home, a new website and a new life..And all of this feels so worth it, when I’m just steps away from that person who helps create every corner of this place a little closer to home, who is always ready to become my guinea pig and who gives me that confidence to think about yet another new recipe. I can’t think of a better way to celebrate it than twisting one of my favorite recipes with his favorite fruit – mango!! (mine as well!!) Long way to go from here, and all along the way, we would love to just Gobble Gobble with you!!!

Game Day Snack – Baked Zucchini Sticks

If you are following the NBA games, you would know what a crazy game is coming up in less than an hour! Now that I’m on the west coast, I’m kind of swayed towards the Golden State team, especially when they have had an exceptional season this year!! But let’s not get carried away indulging in some crazy snacks (we all love our chicken wings and fries!!). In my attempt to not give up fries, I tried to quickly spice up some zucchini sticks in less than half hour. So, go ahead, wear your Golden State caps and enjoy the finals. But wait…you can’t possibly forget to Gobble Gobble!!

Tango w/ Mango

Guess what!!! Summer is approaching real fast and what better way to celebrate than with the king of the fruits himself. Oh yes, I am talking about one of my favorite fruits in the world – mangoes. My love for mangoes go way back to my grandparent’s backyard which has many many mango trees, and every summer vacation my grand pa would introduce us to his world of home grown fruits. Mangoes have a unique freshness associated with them and adding them to a salad just quadrupled it.

Oat Banana Blueberry Muffin (No Sugar No Oil No Flour)

This was another one of the greatest discoveries ever for me! I mean no sugar no flour no oil, and yet a muffin – it’s absolutely genius!! I adopted this recipe from pinterest and the original was a banana oat muffin. I have made so many batches of it with so many different variations that I am obsessed with them. They can be your breakfast muffins or even that afternoon snack that we all crave for! I can’t wait to go back to India to bake a batch with my mom 🙂

Stuffed Cucumbers w/ Minty filling

Summer is almost here!! And cucumbers are so perfect for that source of Vitamin C that we keep talking about. Ok.. time to introduce yet another favorite of mine, actually ours – my boyfriend and I love to indulge on yogurt. And we can pretty much have it everyday with anything, and one of us has to literally intervene and close the yogurt tub to stop!

This recipe is mostly about the filling which can also be used as a dip if you go ahead and grind all of the ingredients for the filing. Enjoy and gobble gobble people!!

Orange Pecan Shrimp Salad

Never knew that oranges and pecans would be such a great combination. And I just love to stumble upon them especially when they give me that zesty kick. This recipe is so light and fresh! I’m sure you would know by now that the shrimp just makes it extra special for me..Lol! Hope you love it as much as I do.. Gobble gobble people!!

Baked Avocado Eggs

Yet another discovery which is a great breakfast or brunch combination with some mimosas! And don’t we like our Sunday brunches, I know I do when it has avocados and eggs. Here you can be creative with the spices you add. I made a very variations and experimented with chilly flakes, or paprika or cilantro and they all taste yummy!

Sautéed Quinoa-Mushrooms w/ Broccoli

This was an adopted recipe, which I loved so much that I decided to try some new spices and play around! Sometimes I add chicken to the below recipe, and sometimes I go slightly heavy with greens. Basically I like to twist the recipes based on what my refrigerator has for me that day. Happy Gobble gobble people!!

I wanted to try making some quick snacks for my in-between-meal-cravings for something different. And I always used to turn to sugary snacks such as mini muffins or cookies etc. I still love them, no doubt there! I’m big on desserts and sweet snacks..But what about something crispy and deliciously healthy? Let’s gobble gobble, will ya!!

Chick’n-pea and Kale Soup

Chicken soup for the healthy soul!! And don’t we all love our chicken soups. One of my room mates used to make the most amazing chicken soups and that was her grandma’s recipe. I never got a hold of that recipe, but I will keep experimenting until I find the perfect one. The below recipe has been one of the versions which has kept me warm in many cold nights.
